Early-budding and early-ripening — hence vulnerable to spring frost, the perennial risk in Chablis — and vigorous and adaptable almost anywhere. Aromatically neutral by nature, it is the classic 'transparent' grape that transmits site and winemaking (oak, lees, malolactic) rather than a loud varietal signature; it has a special affinity for limestone, above all the Kimmeridgian marl of Chablis and the Côte d'Or.

Malolactic and lees ageing add a creamy dimension across both.
