Domaine Servin

One of Chablis's oldest family domaines, the Servins trace their presence in the town to 1654 (with vineyard-owning roots cited by local monastic records even earlier). The estate has passed down the Servin line for well over three centuries and is today directed by François Servin, who has modernised the cellar while keeping a freshness-first, largely unoaked house style.

Roughly 30–37 hectares across the appellation, with an unusually deep holding in the top tiers: four of the seven Grand Crus (Blanchot, Bougros, Les Clos, Les Preuses) and a spread of Premier Crus including Forêts (under the Montmains flag), Montée de Tonnerre, Vaillons, Butteaux, Mont de Milieu, and Vaucoupin. Vinification leans on temperature-controlled stainless steel to preserve acidity and site transparency, with older oak reserved for a few of the richer cuvées; the Chablis 1er Cru Forêts is made in 100% stainless steel.
